Description:Environmental survey and medical interviews at a salami manufacturing plant reveal that a minor health hazard due to respiratory tract irritation exists from exposure to the mold grown on the outside of salami. The workers complained of phlegm production, occasional shortness of breath, headache, and sore throats. Recommendations are made for the installation of exhaust ventilation in the packing area.
